Cajun Recipe: Creole Shrimp and Lobster Bisque

The Simi Valley Cajun & Blues Music Festival offers you a taste of Cajun, Creole, Blues, and Zydeco music. We also offer you foods that reflect the music as well; these great foods are a huge part of what makes the festival so popular.

While there are lots of Cajun recipes, here is one for Creole Shrimp and Lobster Bisque to try.

You will need 2 lobster tails (fresh & steamed), 4T butter, 1 onion (small, white, and finely chopped), 2 cloves garlic (minced), 1/3c. chicken broth, 1/2lb shrimp (steamed, peeled, deveined, chopped), 2c. half & half, and 1t Creole seasoning.

Extract the lobster meat away from the shell, chop coarsely and put aside.  Over medium heat in large saucepan, melt the butter, add next three ingredients, cook five minutes, stir in the flour, cook for two minutes, stir in broth, cook 10 minutes, stir frequently until mixture is thickened.  Then add the lobster, half & half, and Creole.  Cook 10 minutes, stirring several times and serve.
