Cajun Recipe for Bread Pudding

The countdown is on for the 25th Anniversary of The Simi Valley Cajun & Blues Music Festival. Make plans now to join us on Memorial Day Weekend 2014. Here is a Cajun recipe for bread pudding to help get you in the mood!

You need: 4 ¾ c. milk, 4 eggs, 2/3c. sugar, ¼ t. salt, 1t. vanilla, 1/3c. butter (softened), 11c. bread (French style, cubed in 1” cubes), ½ t. cinnamon, 2/3 c. raisins, 2/3 c. pecans (chopped), ¼ c. water, 1/3 c. sugar (brown and packed), 1/3 c. corn syrup, ½ c. pecans (coarsely chopped), ½ t. vanilla, and 2 T. butter.

Heat 4c. milk in saucepan until warm.  Mix ¾c. milk, eggs, and sugar, vanilla, and salt in a big bowl.  Slowly add warm milk to the other mixture and stir constantly.  Stir the butter in, add the bread and soak for ten minutes.  Add the cinnamon, raisins, and pecans.

Put mixture in a baking dish, bake 40 to 60 minutes at 400 degrees, uncovered.  

Sauce: bring ¼c. water to boiling, add brown sugar and stir until it dissolves.  Add the corn syrup and bring to boiling.  Cook for 15 to 20 seconds then remove from heat.  Stir the pecans in along with vanilla, butter and salt.  

Lastly, cut the pudding into squares, pour sauce over and enjoy your Cajun Bread Pudding!
