Cajun Style Oven Fries

The weather’s turned cold and the next Simi Valley Cajun & Blues Music Festival is months away. Until the time comes to enjoy blues, zydeco and Cajun music and food, keep yourself warm with Cajun recipes like the Cajun oven potatoes below:

You will need:

  • 4 potatoes, cut into steak fry wedges
  • 1 tablespoon olive oil
  • 1 teaspoon hot sauce
  • 1 clove garlic, minced finely
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon whole cumin, crushed
  • 1/4 teaspoon thyme leaves, crushed
  • 1/4 teaspoon salt

Preheat your oven to 400 degrees. Line a baking sheet with foil or parchment and grease with a small amount of olive oil.

Combine the spices, hot sauce and remaining olive oil in a gallon-sized zip-top bag and massage with your fingers until a paste forms. Toss the potatoes in the bag with the spices until they are evenly coated.

Spread the potatoes on the baking sheet. Bake for 30 to 35 minutes, or until nicely browned. Turn once during baking for even cooking.
