Cajun-Inspired Back-to-School Lunch Ideas

Spice up your child’s lunch box with these tasty Cajun-inspired recipes!

The start of the new school year is right around the corner!  However, after a long summer full of fun and freedom, it can be difficult to get your child excited for their return to the classroom.  One way to get them a little more excited is by packing your child a delicious lunch that they can look forward to.  For some exciting back-to-school lunch ideas, try out these tasty Cajun-inspired dishes.

Jambalaya Pasta Salad

Ingredients:

  • 8 oz. rotini pasta
  • 1/2 cup mayonnaise or plain Greek yogurt
  • 3 hard-cooked eggs, chopped
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons Creole mustard
  • 1/2-1 teaspoon favorite Creole seasoning

Directions:

  1. Cook pasta according to package directions. Rinse, transfer to a large bowl and cool completely.
  2. Stir in remaining ingredients until well blended. Cover. Refrigerate 4 hours or overnight.
  3. Serve in temperature-controlled thermos or Tupperware container.

 

Cajun Hummus and Veggies

Ingredients:

  • 1-14 oz. can chickpeas drained and rinsed
  • 1/4 cup olive oil
  • 3 garlic cloves
  • 2 tbsp. lemon juice
  • 2 tbsp. tahini
  • 1-2 tbsp. cayenne pepper hot sauce or to taste
  • 2 tsp. paprika
  • 1 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1-2 scallions chopped

Directions:

  1. Place chickpeas, olive oil, garlic, lemon juice, tahini, hot sauce, paprika, thyme, pepper and salt into food processor bowl and blend until smooth and creamy.
  2. Serve with cut veggies and pita chips for dipping.

 

Bayou Blondies

Ingredients:

  • 1 cup chopped pecans
  • 1/2 cup butter, melted
  • 3 large eggs, divided
  • 1 package yellow cake mix
  • 1- 8 oz. package cream cheese, softened
  • 1- 16 oz. package powdered sugar

Directions:

  1. Combine pecans, butter, 1 egg, and cake mix, stirring until well blended; press in bottom of a lightly greased 13- x 9-inch pan.
  2. Beat remaining 2 eggs, cream cheese, and powdered sugar at medium speed with an electric mixer until smooth. Pour over cake mix layer.
  3. Bake at 325° for 40 minutes or until set. Cool in pan on a wire rack.  Cut into squares.
